Nieuw Amsterdam is a late-night, New York-style bar and eatery located in Melbourne’s CBD. The venue serves New American style food with a mix of quirky and classic cocktails.

The venue’s name is a throwback to owner, Michael Roszbach’s Dutch heritage, with New York originally named Nieuw Amsterdam when first settled by Europeans. Hospitality veteran and former Cookie GM, Roszbach is passionate about creating comfortable places for people to celebrate with good food and drinks. This unique, double level bar and eatery is located in an 1880s iron foundry building (originally of hardware merchants), said to have named the Hardware Street precinct.

Designed by Eades & Bergman, the venue interior not only pays heritage to the New York dining scene, but also makes its mark amongst Melbourne’s top bars and eateries, having won two prestigious awards: Best Drinks List and Best Casual Diner.


The Creatives

Nieuw Amsterdam’s Head Chef, Jeff Trotter, hails from the three-hatted Royal Mail in Dunkeld working as Sous Chef to Restaurateur of the Year – Dan Hunter. Trotter also brings clout from his work in kitchens across Canada, England and Ireland, including the Michelin Star awarded L’Ecrivain and Paul Heathcote’s Longridge. Bar Manager and Melbourne cocktail guru, Sean McGuire is the man behind Nieuw Amsterdam’s acclaimed cocktail list, including the popular salted caramel Negroni and lamb-fat-washed mint julep.
